    I like how you didn’t go nuts with a thick crust, which is an ultra-common pizza-making mistake. That said, pro-tip: whether you use a pizza-steel or pizza ceramic, it’s best to heat up either, as well the oven, to the highest possible amount, before actually placing the pizza on there and baking it as fast as possible.

    Now, why? Well, it’s because you want to move as much heat as quickly as possible to the dish, without actually burning the pizza across the shortest amount of time possible. What this accomplishes is to preserve the freshness of the ingredients, whilst also accomplishing the yeast-rising and bread-making… in fact getting the bread (crust) as perfectly, very-lightly scorched as possible.

    Bonus pts for the magic trick of ‘jalapeño slice traveling across jars,’ a good little classic.

    I’m not sure what to call that or if it already has a name lol

    In Peru there’s something kinda similar called leche de tigre, the spicy, key lime, red onion marinade used to prepare ceviche. One can drink it like a shot.

    Indeed, that reminds me of what I’ve learned of Indian cooking, a little bit. For example, I understand that sauteing seeds like cumin and coriander (getting back to cilantro, hah) in “ghee” (clarified butter) is a great / classic way to get the essential flavors of the seeds / ingredients in to the oil component, which can later be transferred towards something else that’s freshly cooked, like dal (lentils) or pollo.








  • The Lemmysphere sure seems to get slammed a lot at places like r/RedditAlternatives. I wonder if possibly some of that is sockpuppet-stuff, as unlikely as that sounds. Still, more than ever we live in the age of misinformation and manipulation by opposition groups & monied interests, so the idea & practice is certainly on the table.

    Unfortunately, there’s also the reputation of at least one of the primary Lemmy coders. Seems like the sooner Kbin, Mastodon, etc can get better integrated, the less notable that should be. *knock on wood*


  • Just make a community. Build it, they will come.

    This is exactly what I’ve done, but I must say that in the particular community’s case, it hasn’t been easy. We’re going on 1.5yrs now, 900+ subscribers, and I’ve personally contributed ~360 posts (most of them curated mini-articles) out of 466 total posts, yet the sub still essentially needs me to provide the content.

    So IME, niche-type subs can take a hell of a lot of work to take off, and we’re not even that much of a niche.
